
In the professional baking world, using boxed cake can be frowned upon. When I started baking, I had the same feelings. I wanted to develop recipes from scratch and felt like using a box was shameful. That cannot be
In my opinion, strawberry boxed cake is extremely artificial in taste and color. I decided to use a vanilla cake mix as the base of my strawberry cake, and the result was delicious!

Here is what you need:
2 vanilla or white cake mixes
5 Eggs
2/3 cup Vegetable Oil
1 cup of Water
Enough Strawberries to make 1 cup of puree
The Process:
In a food processor or blender, puree enough strawberries to measure out to 1 cup of puree.

In a large bowl, dump out the two boxes of cake mix, eggs, oil water and strawberry puree.

Mix well with a whisk or a fork.

Line two 8’’ pans with parchment paper. If you need a guide on how to line pans, click HERE.

Split the batter between the 2 pans and bake at 350 F for about 35 minutes or until a fork/toothpick comes out clean.
It is seriously that easy!

Once your cake is done, let it cool completely before filling and icing it. I always cut my layers in two to make 4 layers, but that is not necessary. You can fill the layers with a buttercream icing. If you need the recipe, click HERE. You can also put cool whip and fresh strawberries. Another idea is to fill it with strawberry jam. You can ice the outside of the cake with a buttercream or cream cheese icing. The fun part about baking is making things your own!
